I’m afraid that veganism will not allow you to cut Christmas salads watching “twist of fate”? Whatever. Share a collection of traditional Christmas recipes in vegan interpretations that will satisfy even the avid meat-eater.
“Seledka under a fur coat”
Ingredients:
1 beet
2 medium sized carrots
3 large potatoes
2 sheets nori
2 pickled cucumbers
200 ml vegan mayonnaise
Recipe:
Potatoes, carrots and beets, boil until tender in plenty of water directly to the skin. Drain, let them cool slightly. Clean the fruit and grate on a fine grater.
On dish put a layer of potatoes, brush with mayonnaise. Sheet nori dip in room temperature water and place the next layer. Then put the sliced cube the cucumber, a little mayonnaise, carrots, mayonnaise and again beets. Top grease with mayonnaise and put in the refrigerator for at least 2 hours.
“Olivier”
Ingredients:
4 potatoes
2 carrots
2 fresh or pickled cucumber
½ Cup green peas (thawed or canned)
Dill, green onion – to taste
Vegan mayonnaise
Tofu, vegan sausage – optional
Recipe:
Potatoes and carrots boil in their jackets. Drain, cool, peel and cut into cubes. Cucumbers cut into cubes. In a bowl mix potatoes, carrots, cucumbers, green peas, tofu or vegan sausage if using. Season with mayonnaise and sprinkle with herbs.
Cake “Pavlova”
Ingredients:
150 g chickpeas
100 g icing sugar
A pinch of salt
¼ Tsp citric acid
100 ml regular or coconut cream
Berries, fruit, chocolate for serving
Recipe:
Chickpeas soak overnight. Rinse and boil in water for 2-3 hours. Remaining broth and salt and add citric acid. When it is completely cool, whip it with a mixer. Slowly start to pour the powdered sugar. The process of churning may take 15 to 20 minutes.
The resulting mixture is spread on the culinary syringes or bags. Put on a baking sheet, greased with parchment, the dough is the desired shape. Dry dessert in the oven at a temperature of 60-80⁰С 1.5 – 2 hours (depending on size of meringues).
Neatly cut ready “meringue” in half horizontally, smear one half of the cream, cover the second. Grease the top again cream and decorate with berries, fruits, nuts or chocolate.
Non-Alcoholic “Champagne”
Ingredients (1 glass):
2-3 tbsp cranberry, cherry or other syrup
½ Cup of mineral water with gas (can be used without gas)
1 tbsp lemon juice – optional
Ice – optional
Berries, fruits – to taste
Recipe:
In each glass put two ice cubes, add the syrup and lemon juice. Pour club soda and stir. Add berries and sliced fruit.
